I don't think there could be a step-by-step guide for this - different pad types/combinations/goals/other settings(Threshold, Retrigger) will dictate different approaches. And it is still most likely you won't get perfect (true acoustic) results. As a simplified approach I can suggest this.
1. Make sure Threshold is reasonable. Setting it too low may make it impossible to get rid of double triggering.
2. Set Rettriger to ~2-4.
3. Start with medium DynLevel and minimum DynTime.
4. Increase DynTime until you fill you got rid of most of double triggering.
5. If you still get double triggering, set DynTime back to minimum and increase DynLevel by one. Repeat step 3.
6. If you can't make fast rolls, set DynTime back to minimum and decrease DynLevel by one. Repeat step 3.
Mesh type pads will require more fine tuning because of the slow decaying wave form. Badly made mesh pads may make it impossible to get rid of double triggering and achieve fast rolls.
Rubber type pads usually work fine without much fine tuning with low DynTime/DynLevel values.
Too "hot" pads or incorrectly set HighLevel will make it harder to fine tune DynTime/DynLevel.
It may(will?) take time to fine tune.
